Girls Night In!

My husband had his fantasy baseball draft last night, so I decided to host a girls night in.  On the menu was Fish, Asparagus, and Quinoa.  I make Quinoa a lot, but wanted to add something to give it a little boost- so I came up with a concoction that was DELISH!  My friend who has never tried Quinoa before loved it as well, which makes me want to share it with you!

Ingredients-  
                   1 Cup Quinoa
                   2 Cups Organic Vegetable Broth (or Chicken Broth)
                   1 Small Yellow Onion- diced
                   1/2 Cup Sliced Almonds
                   1/2 Cup Dried Cranberries

On stove top, "toast" almond slices in pan on medium.  Add onion and Quinoa.  Remove from heat when onion begins to soften.  Combine mixture with vegetable broth in saucepan and bring to a boil.  Once boiling, reduce heat and cover.  Let simmer for 15 minutes.  Add Dried cranberries for the last 5-10 minutes.  Serve when broth has dissolved.
