Love me some AVOCADO!

Avocados have become quite a big hit within the past few years.  I grew up eating them in my household, but I do not remember them being as popular as they are today!  Many people are not aware that they are full of healthy nutritional benefits. Even better- You can add them to so many different recipes or eat them by themselves!
Avocados are full of fat, which is something that scares most people.  We hear the word fat and we think it is going to make us fat, so we tend to stay away from it.  Well, let me fill you in. The fats that are in avocados are a healthy fat, and you should not be afraid to eat them. They are filled with monounsaturated fat, which is considered the "good" fats we learned about in high school.  If you are a person with high blood cholesterol levels, you may want to consume avocados ever day because monounsaturated fat may lower those levels! Monounsaturated fats may help with insulin and blood sugar control, which can help people with type II diabetes. 
Mom's-To-Be should eat plenty of avocados since they are a good source of fiber, vitamins C & K, Folate and B6 ~ which are all essential for those growing bellies.  As for those dad's to be - because of the high source of potassium - you'll feel as good as new after a night of drinking before a crying baby settles into your life.
There are many different ways you can eat avocados. Here are two of my favorite ways to eat my favorite fruit:
Tuna Fish Salad  
1 Can of Tuna
    1/2 Avocado
Onion (as desired) - diced
Mix half an avocado, onion, and tuna fish. Wrap in lettuce, for a delish "wrap".
Or use this amazing tuna recipe

Guacamole
 2-3 ripe avocados- halved and peeled- but KEEP those pits!
      1 tomato- seeded and diced
 1/2 red onion- diced
1-2 chili peppers- diced and seeded (optional)
2 cloves garlic
 Lime juice from half a lime
  1/2 teaspoon ground cumin
 1/2 teaspoon cayenne pepper
1/4 teaspoon sea salt (sometimes I use less)
Mash avocados with potato masher.  Add garlic, lime juice, and seasonings. Mash together.  Add onion, tomato, and chili peppers and mix with fork.  Now, place the pits in the container before letting refrigerate- It will help the guacamole from browning as fast!
Avocados are good for everyone's body, so eat one today!
