Lunch at home on a chilly Friday

                                               

I am off on Friday's.  It is nice to have the extra day off during the week to get things done. Schoolwork, shopping, coffee with a friend- I get to choose what to do with the extra time!  Well today I decided to make a yummy pumpkin soup because I could not get rid of the chill from being outside. Most people think of pumpkin being a fall flavor, but I can enjoy it anytime of the year.  It took about 45 minutes to an hour for it all to be done but it was so worth it! Pumpkin is loaded with vitamin A and antioxidants.  It’s a good source of vitamins C, K, and E, and has lots of minerals, including magnesium, potassium, and iron.  So not only was I eating something that warmed me up and was delish, I was consuming something that is very beneficial to my health!  The recipe I used came from the online magazine The Beauty Bean  and I recommend making it if you have the time and you love pumpkin!
