Baked Zucchini Fries




Summer time is here, and that means fresh veggies from different farms! We belong to a CSA and get different fresh vegetables once a week.  I love it!   Everything is local and organic and I know I won't get anything even close to this at the supermarket!
Yesterday we received our share and it was the first time we received summer squash.  Zucchini and yellow squash.  I decided to make baked fries with it.  It paired well with the rest of our meal, and they took less than a half hour to make! Perfect for anyone who does not have time to cook for hours on end!

Ingredients-

2 Zucchini's cut into sticks (Like I mentioned above- you can you yellow squash instead)
1 egg white
1/4 cup Almond Milk
1/2 cup bread crumbs
1/4 cup parmesan cheese (optional)

Preheat over to 400 degrees.  Mix almond milk and egg white in one dish and bread crumbs and cheese in another.  Dip sticks into milk mixture then breadcrumb mixture.  Lay on baking sheet and bake for 15 minutes, flipping half way thru.  Once golden brown, they are ready to serve!

They were so good we did not have any left over!

When you make your own foods, you know exactly what is going in your body, and for that- your body with thank you!  Remember to always eat for your body!

Avocado Fries!




We all know how much I love Avocados, and how beneficial they are for you, so tonight when I had to make dinner for myself because my husband is off watching the Rangers game, I decided to make myself a treat and bake some avocado fries!
So easy, so simple, and done in less than a half hour!
Non-time consuming- check.  Minimal ingredients- check.  Healthy and tasty- check and check!
Excited to share the recipe!  Enjoy~

Half Avocado (perfect for one)
2 Tablespoons coconut flour- in dish
2 egg whites- mixed together in dish
1/3 cup bread crumbs/panko seasoning- in dish
Chili powder, cumin powder, and other spices to taste- optional.  I happen to like spicy foods, so I added a dash of all to the bread crumbs!  DELISH!

Preheat oven to 425
Slice avocado.
Coat with coconut flour.
Dip in egg whites.
Top with bread crumbs/panko seasoning.
Lay on baking sheet.  Bake for ten minutes.  Flip over and bake for another ten minutes.
Take out of the oven, and enjoy the crispy outside and soft avocado inside that will melt in your mouth!
